Our Story

My grove in Cianciana, Sicily, is home to magnificent olive trees - some nearly 300 years old. These ancient trees, combined with a few newer plantings to add depth and complexity to the flavour, create an oil unlike any other.

Every autumn, we handpick each olive at peak ripeness. Our careful harvesting process uses around 15kg of olives to produce just 1 litre of our oil. Yes, we get less oil this way, but what we lose in quantity, we make up for in extraordinary quality.

The result? A golden, richly flavoured extra virgin olive oil with a vibrant peppery taste and numerous health benefits.

How It’s Made

Every Autumn, we handpick our olives just before peak ripeness, as they turn from green to purple. Picking early means we get less oil from every tree, but it's when the fruit is richest in precious polyphenols. Polyphenols are the compounds behind both the health benefits and the peppery finish of extra virgin olive oil.

Step One: Harvesting

Every harvest reaches the mill within 24 hours, while the fruit is still fresh. It's cold pressed, just once, at no more than 27°C. Heat speeds extraction, but it strips out the polyphenols and the aroma along with them - so we keep it cool and prioritise quality over quantity.

Step Two: Pressing

Our oil rests for a month, letting the fine sediment settle naturally, before bottling. The result? A golden, richly flavoured extra virgin olive oil with a vibrant peppery taste and numerous health benefits.

Step Three: Bottling
